Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 3 cups all-purpose flour
  • 1 cup rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups chocolate chips
  • 1 cup walnuts, chopped
  • 1 cup corn flakes, crushed slightly
  • 1 cup additional corn flakes for added crunch (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (180°C). Line baking sheets with parchment paper.

  2. Creaming Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

  3. Adding Wet Ingredients: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Add the vanilla extract and mix well.

  4. Combining Dry Ingredients: In a separate bowl, whisk together the flour, rolled oats, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Adding Mix-ins: Gently fold in the chocolate chips, chopped walnuts, and both sets of corn flakes until evenly distributed throughout the dough.

  6. Forming Cookies: Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

  7. Baking: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The centers may seem slightly undercooked but will firm up as they cool.

  8. Cooling: Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

  9. Enjoy: Once cooled, grab a glass of milk and enjoy Tutu's Volcano Cookies!
